After quite a few weeks of a summer break, I’m finally back with a new recipe! It was nice to be away for some time, but I am also enjoying to be back at our intimate home. Although the summer has still not completely vanished, the new recipe contains some typical winter spices. They are just always delicious, independent of the season or occasion. Enjoy!
Ingredients
- 120 g soft butter
- 150 g ground walnuts
- 50 g powdered sugar (preferably brown sugar)
- 100 g all-purpose flour
- ½ teaspoon ground cinnamon
- ⅓ teaspoon ground cardamom seeds
- ½ teaspoon grated lemon zest
- a pinch of salt
Recipe
Sift the flour and spices in a large bowl. Combine the softened butter and another bowl with sugar and mix until pale and fluffy. Combine this mixture with the flour and spices, add ground walnuts and lemon zest and mix just to combine. Shape the cookies and arrange them on a baking tray covered with baking paper. Leave about 3 cm distance between the cookies because they will expand while baking. Transfer the baking tray with cookies to the freezer and let it sit for 30 minutes.
Preheat the oven to 180°C. Depending on the size and thickness of your cookies, the baking time will vary. The cookies are done when their edges become golden. Mine needed less than 10 minutes, but the cookies were quite thin. Once done, let the cookies cool down for 10-15 minutes before removing them from the tray. If you like, you can roll the cookies in powdered sugar. Store in an airtight container.
