It is summer. In the evenings there is the appetizing smell of fresh barbecue all over the neighborhood. A good, delicious barbecue sauce is something which should not be missing in this picture. Spice up your food and senses with a real, homemade sauce, which will make your barbecue evenings a big festival of flavours.
Ingredients
- 4 kg tomatoes (preferably the Roma-type of tomatoes)
- 6 teaspoons salt
- 300 g raisins
- 200 g sugar
- 4 cloves garlic
- 3 small cloves
- 100 ml apple vinegar
- 60 ml soya sauce
- ½ teaspoon cinnamon powder
- ½ teaspoon ground nutmeg
- ½ teaspoon curry powder
- 1-2 spoons cornstarch

Recipe
Wash the tomatoes and quarter them. Add 4 teaspoons of salt and boil at medium heat. Cook for 15 minutes and add washed the raisins, 150 g of sugar, the chopped garlic and cloves. Continue cooking at medium heat for 1.5-2 hours, stirring occasionally. Pass through a sieve and squeeze out as much liquid as possible. After you have the concentrated tomato sauce, add vinegar, 2 more teaspoons salt, soya sauce and spices. Cook for another 30 minutes.
Dissolve 1 spoon of cornstarch in a little bit of water and add it by stirring into the cooking sauce. The sauce will start thickening. Depending on the type of the tomatoes used, you might need some more cornstarch if you prefer a thicker sauce. Or you can just keep cooking it for longer and reduce the sauce until it’s at your preferred thickness.
With this recipe you will get 1.3-1.5 liter of sauce, depending on the final density. Store it in sterilized bottles in a cold place.
