Roast Beef

If you look for a perfect combination of simplicity, tenderness and taste, this is it!

 

 

Ingredients
  • 800 g quality top side of the beef
  • 1 teaspoon salt
  • fresh pepper
  • 50 g butter
  • olive oil

 

Recipe

Remove the meat from the fridge 1 hour before preparation to get it to room temperature. Set the oven to 80°C. Flavour with salt and pepper.

Melt the butter in a frying pan and roast the meat gently from all sides to get a nice crispy crust. Do not flip before the crust has formed on the roasting side.

Transfer the meat to a roasting tray. Drizzle the meat with olive oil and insert the thermometer in the thickest part of the meat piece.

Cook it for approximately two hours or until the core temperature reaches 55°C.

After taking the meat out of the oven, put it on a piece of aluminum foil, wrap it from all sides and let it sit for 15 minutes before cutting.

My suggestion for the sides would be seasonal vegetables which you can cook in the same tray together with the roast beef.
