Another Christmas cookie that made it to the short list! I think, the decisive thing, why they have been selected, is because of the candied cherry pickled in Rum. These biscuits capture it like a glowing particle…
Ingredients
- 125 g butter
- 50 g sugar
- 1 egg
- 1 tablespoon cream cheese (for example Philadelphia)
- 250 g flour
- 1 teaspoon vanilla extract
- candied cherries
- rum
Recipe
First, mix the sugar with butter, which should be at room temperature. Add the cheese, egg and vanilla, mix further to get a homogenous dough. Wrap the dough in a plastic foil and leave it to rest for 1 hour in the fridge.
Put the candied cherries in a small bowl and add 3-4 tablespoons rum. Let it stand for 1 hour.
After the dough has been cooled down, take small pieces of it and form a ball. In the middle of each ball, insert one candied rum cherry. Preheat the oven to 170°C and bake the cookies for 15 minutes.
Let them cool down and sprinkle them with icing sugar before serving.
