Cinnamon Stars

These are my favorite Christmas cookies! Simply, every cookie box feels incomplete to me without them. The amazing perfume which is created while baking them fills your entire kitchen!

 

 

 Ingredients
  • 3 egg whites
  • 400 g finely ground almonds
  • 300 g icing sugar
  • zest of one organic lemon
  • pinch of ground clove
  • 1 tablespoon ground cinnamon
  • icing sugar for dusting

 

Recipe

Beat egg whites with the highest speed of your mixer until white and fluffy. Start adding the icing sugar gradually and decrease the speed of your mixer every time you add more sugar (otherwise your kitchen might get very dusty 🙂 ). Mix until a shiny and snow-white mass is formed.

Separate 5 tablespoons of beaten egg whites in one bowl for cover glaze. To the rest add almonds, cinnamon, ground clove and lemon zest and mix everything to a dough. Roll it out to approximately ½ cm in thickness on a surface dusted with icing sugar. Cut out stars by using a cookie cutter and transfer them on a tray layered with baking paper. Spread the rest of the beaten egg whites over each star by using a small kitchen knife. Let it dry at room temperature overnight.

On the next day, preheat the oven to 180°C. Bake the stars at the lowest position in your oven for 3-5 minutes. The glaze has to stay white.
