I’m not sure, where the name of these cookies comes from, but it perfectly fits! They look like delicate, handmade pieces waiting to be used on the finest fabric. Just, they taste much better…
Ingredients
Dark part:
- 300 g grated walnuts
- 200 g icing sugar
- 1 egg
- 1 egg yolk
- 2 tablespoons cocoa powder
White part:
- 1 egg white
- 3 tablespoons icing sugar
- 1 tablespoon flour
- 1 tablespoon fresh pressed lemon juice
- whole walnuts for decoration
- 100 g sugar
Recipe
Mix in a bowl grated walnuts, icing sugar, egg yolk and cocoa powder until you get a homogenous mass. Form small balls of a size of a walnut and place them on with baking paper covered tray. Flatten each ball to a sphere with a little pressure of your finger.
For the white part mix the egg white with the highest speed of your mixer until it becomes creamy and white. Add sugar and lemon juice. Mix further until you get a shiny firm foam. At the end add the flour and do not mix with the mixer, use the spoon to stir it in. Use a small plastic bag, put the white cream inside and cut a small hole on one of the corners. Squeeze out the white cream over the dark bottom piece until you cover the whole surface. At the end, place half of a walnut on top of each piece. Preheat the oven to 60°C and dry the cookies for an hour.
