Mandarin Cookies

This year I was quite late with baking Christmas cookies. I almost decided to give it up, since I didn’t really have time and my motivation was quite low. But then I woke up on one Saturday with the vision of a plate full of beautiful cookies. I baked 12 hours at a stretch and ended up with 8 different types of cookies. These mandarin cookies are one of those. The flavour of the mandarins gives them a certain freshness which I really like. To me, they smell like winter.

 

 

Ingredients for ca. 50 pieces

 

Recipe

Sift the flour, baking powder and turmeric into a bowl. I add turmeric just so the cookies have a yellowish color. 🙂 Add cold butter cut in pieces, sugar, egg and mandarin juice and zest. Combine everything to a soft dough. Wrap it with the plastic foil and leave in the fridge for 2 hours.

Cover two baking trays with baking paper. Take the dough out of the fridge. Make small dough pieces and form them to balls of the size of a walnut. Roll the dough balls first in granulated sugar and afterwards in the icing sugar. Put the cookies on the baking tray with some distance in between. Bake them for 10 minutes at 180°C. Let cool down on the tray and store them in a tightly closed metal cookie-box.
